Batcha batchang Lutong Ulam translates to “Batch of Home-Cooked Viands” in English, but the term Batcha-Batcha refers to the physical serving of viands or putahes/ulam in plastic or stainless steel tubs, as shown below.
As previously mentioned, this business has established itself as one of the primary stops for local Kapampangans seeking genuine lutong bahay ulams. However, Batcha Batchang Lutong Ulam was not always a batcha batcha. Starting with just one kilo of ulams and three putahes in smaller tubs called planggana from the owner’s mother; the now owner, Emilia Aguarin, carried on the small business, growing it into a batcha batcha ulams that could serve their expanding customer base over the years.
Affordable Bestsellers
Along with their authentically prepared Kapampangan ulams, they are also well-known for their bestsellers. They expect all 20 of their putahes to be ready by 10am each day, with some of them being ready as early as 6 or 7 am.
Their beef dishes, which are all priced at around P80, are unquestionably worth more than their cheap rate. To name a few, they serve Beef Nilaga and their genuine Kapampangan Beef Lengua, which features chunks of beef tongue in a creamy sauce with crunchy corn.
Another dish that is very popular in Kapampanga is called sisig, which is made of small pieces of fried pork that are sauteed in margarine with a lot of white onions. It might be the cheapest sisig you can find that is still worth the price at only Php75!
Their lechon kawali costs Php80 and is adored for its umami flavor and crunchiness. When served with vinegar, the crispy skin of lechon kawali can maintain its crunch all day long!
Despite the price increases brought on by the nation’s current inflation, Emilia kept her prices the same in order to continue serving her sukis as seen with the ton of white onions added to their sisig dish.
